Mexican cornbread
Ingredients/Components
- sugar - 1 c
- eggs - 4 item
- salt - 1/4 tsp
- flour - 1 c
- baking powder - 4 tsp
- sticks oleo - 2 item
- cornmeal - 1 c
- shredded Cheddar cheese - 1/2 c
- shredded Jack cheese - 1/2 c
- cream-style corn - 1 c
- can green diced chilies I used jalapeno peppers - 1 oz
How to make mexican cornbread:
Cream oleo and sugar. Add eggs, one at a time. Now add chilies, cheese and corn. Sift and add flour, cornmeal, baking powder and salt. Bake in 9 x 13-inch pan, greased and floured well. Bake at 350° for 40 minutes.Note: I used 1 cup Longhorn cheese instead of cheese suggested. Also, may want to reduce sugar to 1/2 cup because it is very sweet.
