Ingredients/Components

  • sugar - 1 c
  • eggs - 4 item
  • salt - 1/4 tsp
  • flour - 1 c
  • baking powder - 4 tsp
  • sticks oleo - 2 item
  • cornmeal - 1 c
  • shredded Cheddar cheese - 1/2 c
  • shredded Jack cheese - 1/2 c
  • cream-style corn - 1 c
  • can green diced chilies I used jalapeno peppers - 1 oz

How to make mexican cornbread:

Cream oleo and sugar. Add eggs, one at a time. Now add chilies, cheese and corn. Sift and add flour, cornmeal, baking powder and salt. Bake in 9 x 13-inch pan, greased and floured well. Bake at 350° for 40 minutes.

Note: I used 1 cup Longhorn cheese instead of cheese suggested. Also, may want to reduce sugar to 1/2 cup because it is very sweet.
