  • sugar - 2 Tbsp
  • salt - 1 tsp
  • buttermilk - 1 c
  • eggs, beaten - 2 item
  • baking powder - 2 tsp
  • baking soda - 1/2 tsp
  • vegetable oil - 1/2 c
  • all-purpose flour - 1/3 c
  • chopped onion - 1/3 c
  • green pepper, chopped - 2 Tbsp
  • Cheddar cheese, shredded - 1/2 c
  • yellow corn meal - 1 c
  • can creamed corn - 1 item

How to make mexican corn bread:

In a medium bowl, combine first 6 ingredients. Combine remaining ingredients. Add to dry ingredients and stir until moistened. Pour in a 10-inch pan or an iron skillet that has been greased. Bake at 350° for 30 to 35 minutes or until golden brown. Makes 8 to 10 servings.
