Mexican corn bread
Ingredients/Components
- sugar - 2 Tbsp
- salt - 1 tsp
- buttermilk - 1 c
- eggs, beaten - 2 item
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- vegetable oil - 1/2 c
- all-purpose flour - 1/3 c
- chopped onion - 1/3 c
- green pepper, chopped - 2 Tbsp
- Cheddar cheese, shredded - 1/2 c
- yellow corn meal - 1 c
- can creamed corn - 1 item
How to make mexican corn bread:
In a medium bowl, combine first 6 ingredients. Combine remaining ingredients. Add to dry ingredients and stir until moistened. Pour in a 10-inch pan or an iron skillet that has been greased. Bake at 350° for 30 to 35 minutes or until golden brown. Makes 8 to 10 servings.Recipe categories: < 4 hours, Breads, Mexican.
