Mexican corn bread
Ingredients/Components
- sugar - 2 Tbsp
- salt - 1 tsp
- buttermilk - 1 c
- eggs, beaten - 2 item
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- vegetable oil - 1/2 c
- all-purpose flour - 1/3 c
- chopped onion - 1/3 c
- chopped green pepper - 2 Tbsp
- shredded Cheddar cheese - 1/2 c
- can cream-style corn - 1 3/4
- yellow corn meal - 1 c
How to make mexican corn bread:
In a mixing bowl, combine first six ingredients. Combine remaining ingredients; add to dry ingredients and stir only until moistened.Pour into a greased 9-inch square baking pan or 10-inch heavy skillet. Bake at 350° for 30 to 35 minutes or until bread is golden brown and tests done. Yields 8 to 10 servings.
