Ingredients/Components

  • sugar - 2 Tbsp
  • salt - 1 tsp
  • buttermilk - 1 c
  • eggs, beaten - 2 item
  • baking powder - 2 tsp
  • baking soda - 1/2 tsp
  • vegetable oil - 1/2 c
  • all-purpose flour - 1/3 c
  • chopped onion - 1/3 c
  • chopped green pepper - 2 Tbsp
  • shredded Cheddar cheese - 1/2 c
  • yellow cornmeal - 1 c
  • can cream-style corn - 1 item

How to make mexican corn bread:

In a mixing bowl, combine first 6 ingredients. Combine remaining ingredients; add to dry ingredients and stir only until moistened. Pour into a greased 9-inch square baking pan or 10-inch heavy skillet. Bake at 350° for 30 to 35 minutes, or until bread is golden brown and tests done. Makes 8 to 10 servings.
