- eggs - 3 item
- grated Cheddar cheese - 1 item
- corn oil - 1 Tbsp
- can whole kernel corn - 1 item
- sausage - 1 lb
- self-rising corn meal - 2 c
- milk to desired consistency - 1 item
- can Mexican hot relish or 1 can Ro-Tel, drained - 1 item
How to make mexican corn bread:
In a large bowl, mix corn, relish and eggs. Add corn meal gradually; add milk to desired consistency. Add 1 tablespoon oil. Brown 1 pound sausage. Add to corn meal mixture. Pour half of mixture into greased 9 x 13-inch pan. Spread with grated cheese,Recipe categories: < 4 hours, Breads, Mexican.
