Mexican chicken and rice
Ingredients/Components
- oil - 1 Tbsp
- chicken broth - 1 c
- 2 oz - 1/2 c
- small onion, chopped - 1 item
- Minute rice
- mild salsa - 1 c
- 10 oz - 1 pkg
- small green pepper, chopped - 1 item
- boneless skinless chicken, cubed - 1 lb
How to make mexican chicken and rice:
Heat oil in large skillet on medium-high heat. Add chicken, onion and pepper; cook and stir until chicken is cooked through. Add corn, broth and salsa. Bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes. Fluff with fork. Sprinkle with cheese; cover. Let stand until cheese melts. Serves 4.Recipe categories: < 60 mins, North american, Mexican.
