Ingredients/Components

  • Velveeta cheese - 1 lb
  • can cream of chicken soup - 1 item
  • can cream of mushroom soup - 1 item
  • onion - 1 item
  • lean ground meat - 2 lb
  • large can Ranch Style beans - 1 item
  • can Ro-Tel tomatoes and green chilies - 1 item
  • corn tortillas 12 - 1 pkg

How to make mexican casserole:

Brown together ground meat and onion (chopped). Add soups, beans and tomatoes. Grease a large casserole dish. Shred half the tortillas and place in casserole. Spoon 1/2 the meat mixture over the tortillas. Slice half the cheese and layer over this. Repeat this process. Bake at 325° for 1 hour.
