Ingredients/Components

  • shredded cheddar cheese - 1 c
  • can Cream of Chicken soup - 1 item
  • ground chuck, browned cooked chicken may be substituted - 1 lb
  • onion, thinly sliced or grated - 1 item
  • Rotel, diced - 1 can
  • tortilla chips small - 1 pkg

How to make mexican casserole:

Brown the meat; drain and set aside. Line the bottom of a baking dish with tortilla chips. Sprinkle the meat on top of the chips. Place sliced or grated onion on top of this. Combine the Rotel and the cream of chicken soup; mix well. Pour this mixture evenly over the meat. Sprinkle grated cheese over the entire mixture. Cook in 350° oven until hot (about 30 minutes, or until bubbly).
