Mexican black-eyed peas
Ingredients/Components
- sugar - 2 tsp
- pkg - 16 oz
- water - 1/2 c
- pepper - 1/4 tsp
- garlic salt - 2 Tbsp
- chili powder
- can Ro-Tel tomatoes - 1 item
- medium onion, chopped - 1 item
- celery salt
- can diced tomatoes - 1 item
- rolled pork sausage - 2 lb
How to make mexican black-eyed peas:
Cover peas with water; soak overnight. Brown sausage, stirring to crumble. Add onion; cook until tender. Drain. Drain peas. In large pot, add peas with sausage; stir well. Add remaining ingredients; stir. Bring to boil, reduce heat and simmer 1 1/2 hours. Add water if needed. Great at New Years.Recipe categories: < 4 hours, Time to make, Beans.
