Ingredients/Components

  • sugar - 2 tsp
  • pkg - 16 oz
  • water - 1/2 c
  • pepper - 1/4 tsp
  • garlic salt - 2 Tbsp
  • chili powder
  • can Ro-Tel tomatoes - 1 item
  • medium onion, chopped - 1 item
  • celery salt
  • can diced tomatoes - 1 item
  • rolled pork sausage - 2 lb

How to make mexican black-eyed peas:

Cover peas with water; soak overnight. Brown sausage, stirring to crumble. Add onion; cook until tender. Drain. Drain peas. In large pot, add peas with sausage; stir well. Add remaining ingredients; stir. Bring to boil, reduce heat and simmer 1 1/2 hours. Add water if needed. Great at New Years.
