Mexican beef and cornbread pie
Ingredients/Components
- salt - 1/2 tsp
- water - 3 c
- margarine - 1 Tbsp
- Worcestershire sauce - 1 Tbsp
- chili powder - 1 tsp
- yellow cornmeal
- large onion, chopped - 1 item
- chicken or beef broth - 1 c
- cumin - 1 tsp
- large green pepper, chopped - 1 item
- 10 oz - 1 pkg
- large tomatoes, chopped - 2 item
- lean ground sirloin - 1 lb
How to make mexican beef and cornbread pie:
Topping:1 1/2 c. yellow cornmeal3 c. water1/4 tsp. salt1 Tbsp. margarine Preheat oven to 400°. Heat beef; saute until no longer pink (5 minutes). Pour into paper towel lined strainer to drain. Return beef to skillet; add onions and cook until translucent (3 minutes). Add remaining ingredients. Simmer uncovered 20 minutes.Topping: Combine all topping ingredients in saucepan; bring to boil, stirring constantly. Cook until thickened (3 minutes).
Place beef mixture in 2-quart baking dish. Spoon on topping mixture, spreading to cover. Bake uncovered 30 to 40 minutes until topping is golden brown. Makes 6 servings.
