Ingredients/Components

  • pkg - 1 oz
  • oil - 1 Tbsp
  • chicken broth - 1 c
  • salsa - 1 c
  • shredded Cheddar cheese - 1/2 c
  • onion, diced - 1 item
  • green pepper, diced - 1 item
  • instant rice
  • red pepper, diced - 1 item

How to make mexicali rice:

Cook peppers and onions until tender. Add corn, salsa and broth. Bring to boil. Stir in rice, cover and remove from heat. Let stand 5 minutes. Add cheese, fluff with fork. Serve with beef filled tostadas. Enjoy!!
