Ingredients/Components
- pkg - 1 oz
- oil - 1 Tbsp
- chicken broth - 1 c
- salsa - 1 c
- shredded Cheddar cheese - 1/2 c
- onion, diced - 1 item
- green pepper, diced - 1 item
- instant rice
- red pepper, diced - 1 item
How to make mexicali rice:
Cook peppers and onions until tender. Add corn, salsa and broth. Bring to boil. Stir in rice, cover and remove from heat. Let stand 5 minutes. Add cheese, fluff with fork. Serve with beef filled tostadas. Enjoy!!Recipe categories: Side dish, Casseroles, Rice.
