Mexican chicken and rice
Ingredients/Components
- pkg - 10 oz
- oil - 1 Tbsp
- chicken broth - 1 c
- shredded Cheddar cheese - 1/2 c
- small green pepper - 1 item
- small onion - 1 item
- mild salsa - 1 c
- instant rice
- boneless, skinless chicken breasts, cubed - 1 lb
How to make mexican chicken and rice:
Heat oil in large skillet on medium heat. Add chicken, onion and pepper; cook and stir until chicken is cooked through. Add corn, broth and salsa; bring to boil. Stir in rice and cover. Remove from heat and let stand 5 minutes. Fluff with fork. Sprinkle with cheese; cover and let stand 2 minutes or until cheese melts.
