- milk - 2/3 c
- egg - 1 item
- can whole kernel corn, drained - 1 1/2
- grated cheese - 1 c
- ground beef - 1 lb
- can whole tomatoes, chopped and undrained - 1 1/2
- Mexican cornbread mix Martha White - 1 pkg
How to make mexicali casserole:
Preheat oven to 400°. Grease a shallow 2-quart baking dish. Brown ground beef in a large skillet; drain. Return to skillet; add taco seasoning, tomatoes and corn. Bring mixture to a boil over medium heat, stirring occasionally. Pour mixture into a baking dish. Cover with cheese. Mix egg, milk and cornbread mix. Pour over mixture. Bake at 400° for 25 to 30 minutes or until golden brown. Cool 10 minutes before serving.Recipe categories: Main dish, Casseroles, North american.
