Mexicali casserole
Ingredients/Components
- pkg - 1 oz
- butter or margarine - 1 Tbsp
- chopped onion - 1/2 c
- shredded sharp Cheddar cheese - 1 c
- can whole kernel corn, drained - 1 oz
- cans chili with beans - 2 oz
- can whole tomatoes, chopped and drained - 1 oz
How to make mexicali casserole:
Heat oven to 350°. Saute chopped onions in a large skillet. Add chili, corn and tomatoes; mix until well blended. Pour into 12 x 8-inch baking dish. Prepare corn muffin mix according to package directions; stir cheese into dough. Spoon dough around edge of baking dish. Bake at 350° for 30 minutes.
