Fiesta tamale pie
Ingredients/Components
- pkg - 1 1/2
- milk - 1/3 c
- salt - 1 tsp
- egg - 1 item
- clove garlic, minced - 1 item
- chopped onion - 1/4 c
- chili powder
- dash of paprika - 1 item
- can whole kernel corn, drained - 1 oz
- ground beef - 1 lb
- shredded Cheddar cheese - 1/2 c
- can tomato paste - 1 oz
- can stewed tomatoes, drained - 1 oz
- pork sausage - 1/4 lb
- pitted ripe olives, sliced - 1/4 c
How to make fiesta tamale pie:
Mix muffin mix, egg and milk; set aside.Mix beef, sausage, onion and garlic in an 8 x 8-inch glass dish. Microwave (High) for 5 to 9 minutes (meat no longer pink). Stir once to break up meat. Drain. Stir in tomatoes, corn, tomato paste, chili powder and salt. Microwave (High) for 4 to 8 minutes until thickens. Stir in olives.
Spread muffin mixture over beef mixture. Microwave (Medium-high) for 5 minutes, then at High for 4 to 8 minutes until center is set. Sprinkle with cheese and paprika during last 2 minutes.
