Ingredients/Components
- sugar - 1/2 c
- vanilla - 1 tsp
- milk - 4 Tbsp
- butter - 1/2 c
- baking powder
- cake flour - 1 c
- egg yolks, beaten - 4 item
- sugar 1/2 granulated and 1/2 4xx sugar, powdered - 1 c
How to make meringue cake:
Cream together butter and sugar. Sift together flour and baking powder. Alternate flour and milk when adding to butter-sugar-milk mixture. Add vanilla. This makes a thick batter, which should be spread thinly over two 9-inch cake pans.Beat 4 egg whites to a foam and very gradually add 1 cup sugar. Use 1/2 granulated and 1/2 4xx sugar (powdered). Beat until very light and well blended. Add 1/2 teaspoon vanilla.
Spread meringue on top of batter in both tins, but only to within 1/2-inch of edge of pan. Meringue will spread as it bakes. Put pecan halves on top of meringue in one tin. Bake about 25 minutes at 350°.
Serve with whipped cream between layers and for decoration on top layer with the nuts.
