Mashed potato pie
Ingredients/Components
- lemon juice - 1 Tbsp
- paprika - 1/2 tsp
- finely chopped onion - 1/4 c
- bacon, cooked crisp and crumbled - 1/2 lb
- or more leftover mashed potatoes - 2 c
- 9-inch crust, baked and cooled - 1 item
- chopped, fresh parsley or 1 Tbsp - 3 Tbsp
- grated orange Cheddar cheese not low-fat - 2 c
How to make mashed potato pie:
Mix potatoes, onion, parsley, lemon juice and paprika. Spread evenly into pie crust. Top with cheese and bacon. Bake 15 to 20 minutes at 350°. Can be used as a main course with a salad or as a side dish.Recipe categories: Egg, Potato, Cheese.
