Ingredients/Components

  • half and half - 2 c
  • salt - 1/4 tsp
  • eggs, beaten - 4 item
  • all-purpose flour - 1 Tbsp
  • dry mustard - 1/2 tsp
  • 6 oz
  • diced, cooked ham - 1/2 c
  • pastry for 9-inch pie

How to make ham quiche:

Line a 9-inch pie plate with pastry. Trim excess pastry around edges; fold edges under, and flute. Prick bottom and sides of pastry with a fork. Bake at 400° for 3 minutes; remove from oven and gently prick with a fork. Bake an additional 5 minutes. Combine cheese and flour; sprinkle evenly into pastry shell. Top with ham. Set aside. Combine eggs, half and half, dry mustard and salt, stirring well. Pour mixture into pastry shell. Bake at 325° for 55 to 60 minutes or until set. Let stand 10 minutes before serving. Yield: one 9-inch quiche.

Summer Sausage Quiche: Substitute 1/2 cup diced summer sausage for ham.

Mushroom Quiche: Saute 1/2 pound sliced mushrooms and 1 small onion, chopped, in 2 tablespoons vegetable oil. Drain. Substitute mushrooms and onion for ham and bake an additional 5 to 10 minutes.
