Ingredients/Components

  • sugar - 1 tsp
  • salt
  • water - 2 c
  • grated Parmesan cheese - 1/2 c
  • snipped parsley - 2 Tbsp
  • cloves garlic, minced - 2 item
  • chopped onions - 1/2 c
  • 3 c - 24 oz
  • ground beef - 1 lb
  • oregano - 2 tsp
  • can sliced mushrooms, drained - 1 oz
  • cans tomato paste - 2 oz
  • eggs, slightly beaten - 2 item
  • manicotti shells - 3 item

How to make manicotti:

In a large pan, brown meat and drain fat. Add water, tomato paste, onions, mushroom, 2 tablespoons parsley, oregano, salt, sugar and garlic. Simmer uncovered for 30 minutes, stirring occasionally.

Combine Ricotta cheese, Parmesan cheese, eggs and 1/4 cup parsley in bowl. Cook shells in boiling water just until tender, about 15 minutes. Drain.

Use a small spoon to stuff each shell with cheese mix. Pour half the tomato sauce mix in 13 x 9-inch pan. Arrange shells. Cover with remaining sauce. Bake at 350° for 30 to 35 minutes. Let stand 10 minutes.
