  • grated cheese - 3/4 c
  • salt and pepper to taste - 1 item
  • macaroni - 1/3 lb
  • white sauce

How to make macaroni au gratin:

Cook macaroni in boiling salted water until tender. Drain thoroughly. Put a layer at the bottom of a baking dish. Make the sauce by blending in saucepan, 3 level tablespoons of butter (or margarine) with the same quantity of flour. Add slowly 1 1/2 cups milk and stir until the sauce boils. Cook 3 minutes and season with salt and pepper. Add 2/3 of the cheese to the sauce and put layer over the macaroni in the dish. Proceed in this way, first macaroni, then sauce until the dish is full, having sauce for the last layer. Sprinkle the remainder of the cheese over the top. Bake in a moderate oven at 350° about 45 minutes.
