Low-fat rice pudding
Ingredients/Components
- vanilla - 2 tsp
- salt - 1/4 tsp
- water - 1 c
- nutmeg - 1/4 tsp
- skim milk
- uncooked rice - 1/2 c
- chopped raisins - 1/2 c
- sugar or 1/4 c - 1/2 c
- Egg Beaters equal to 3 eggs
How to make low-fat rice pudding:
In large saucepan, bring to boil the rice and water. Stir, cover and simmer until rice is tender and liquid is absorbed, about 14 minutes. Turn into a round 1 1/2-quart casserole, sprayed with nonstick spray. Stir in raisins; set aside.In same saucepan, scald milk; stir in Egg Beaters, sugar, vanilla and salt. Set casserole in pan containing 1-inch of water. Bake in 350° oven for 65 to 70 minutes. Sprinkle with nutmeg.
