Low-fat rice pudding
Ingredients/Components
- sugar - 1/4 c
- vanilla - 1/2 tsp
- skim milk - 1 qt
- uncooked long grain rice - 1/3 c
- egg substitute - 1/3 c
How to make low-fat rice pudding:
Combine rice and milk in a heavy saucepan. Bring to a boil over medium heat. Reduce heat and simmer, uncovered, stirring frequently, until rice is very tender (about 30 to 35 minutes).Whisk together egg substitute and sugar. Gradually whisk into the egg and sugar mixture, approximately 1 cup of hot milk and rice mixture. Pour new mixture back into the saucepan with milk and rice mixture and cook 2 minutes over low heat, stirring constantly. Remove from heat. Stir in vanilla and transfer pudding to bowl. Serve warm or cold.
