Lobster a la newburg
Ingredients/Components
- salt - 1 tsp
- flour - 2 Tbsp
- butter - 6 Tbsp
- nutmeg - 1/8 tsp
- egg yolks - 3 item
- cream - 2 c
- dash of paprika - 1 item
- cooked lobster meat - 3 c
- sherry - 3 Tbsp
- toast - 1 item
How to make lobster a la newburg:
Melt butter in top of double boiler and stir in butter. Add lobster meat, then seasonings and sherry. Place over hot water. Beat egg yolks slightly; add cream and mix well. Combine with the lobster, stirring to thicken.Serve on toast, or in individual baking dishes, sprinkled with buttered bread crumbs and browned under the broiler. Serves 6.
This may be prepared a day or 2 ahead if kept well refrigerated. Reheat in double boiler or chafing dish.
