Ingredients/Components

  • flour - 1 Tbsp
  • clove garlic, minced - 1 item
  • small onion, chopped - 1 item
  • olive oil - 2 Tbsp
  • chopped parsley - 1/3 c
  • clam juice - 1 c
  • black pepper to taste - 1 item
  • canned minced clams - 1 c

How to make linguini and clam sauce:

In a saucepan, heat oil. Add garlic and onion. Cook until tender over moderate heat. Stir in the flour and cook for 2 minutes, stirring constantly. Add clam juice and stir until thickened.

Add parsley and pepper. Simmer for 10 minutes. Add minced clams and cook only until clams are heated. Serve over 1 pound cooked linguini. Makes 4 servings.
