Ingredients/Components
- sugar - 8 c
- salt - 1 tsp
- water - 2 gal
- whole cloves - 2 tsp
- lime - 2 c
- to 30 cucumbers - 25 item
- vinegar * - 2 qt
How to make lime pickles:
*Use vinegar with 5% acidity.Slice cucumbers about 1/8-inch thick. Dissolve lime in water and cover cucumbers. Let stand 24 hours. Rinse well. Let stand 3 hours in clear water. Drain. Mix well the vinegar, sugar, cloves and salt and pour over cucumbers. Green food coloring may be added for a pretty look. Let stand overnight. In morning, bring to a boil and boil 25 to 40 minutes. Fill sterilized jars to within 1/2-inch of top with cucumbers and syrup. Put on cap. Process in boiling water bath 5 minutes.
