Lime pickles
Ingredients/Components
- sugar - 16 c
- salt - 1 Tbsp
- water - 5 qt
- vinegar - 16 c
- celery seed - 1 tsp
- whole cloves - 1 tsp
- cucumbers - 2 gal
- stick cinnamon, broken up - 3/4 item
- household hydrated lime - 4 c
- to 8 drops green coloring - 5 item
How to make lime pickles:
Prepare lime solution with the 5 quarts water and the hydrated lime. Wash cucumbers thoroughly and slice. Soak cucumbers in lime solution for 24 hours. Wash cucumbers in several waters to remove lime.Heat the remaining ingredients, except green coloring, to a simmer, then pour over cucumbers. Let set for 3 hours. Bring heat up to low boil and cook for 1 hour. Add the green coloring. Place hot pickles in jar and seal.
