Ingredients/Components

  • red wine vinegar - 2 Tbsp
  • cloves garlic, minced - 2 item
  • parsley - 1/8 tsp
  • olive oil - 2 Tbsp
  • fresh ground pepper to taste - 1 item
  • medium onion, chopped - 1 item
  • dried basil - 1/8 tsp
  • stalks celery, chopped - 2 item
  • bay leaves - 2 item
  • carrots, chopped - 2 item
  • lentils - 1 lb
  • whole chicken breasts, skinned, boned and cut into 1 x 1/2-inch pieces - 2 item
  • stewed tomatoes or 1 lb - 1 oz

How to make lentil soup:

Wash and pick over lentils; place in large pot. Cover with water; boil 2 minutes. Drain, rinse and return to pot. Add 4 cups water and chicken broth or stock. Boil. Add chicken, carrots, celery, onion, garlic and bay leaves. Simmer 20 minutes. Add
