Ingredients/Components
- butter, softened - 1/2 stick
- salt - 1 tsp
- egg yolks - 2 item
- lemon juice - 3 Tbsp
- pepper to taste - 1 item
- sweet potatoes - 4 lb
- lemon slices - 1 item
How to make lemon sweet potatoes:
In a bowl, combine sweet potatoes (cooked, peeled and mashed), lemon juice and salt. Beat in the butter, egg yolks and pepper to taste. Transfer the mixture to a buttered 1 1/2-quart casserole, top it with lemon slices and brush the top with melted butter. Bake the casserole in a preheated, moderately slow oven (325°) for 45 minutes or until it is heated through. Serves 8.Recipe categories: Squash, Side dish, Vegetables.
