Lemon meringue pie
Ingredients/Components
- sugar - 2 c
- salt - 1/2 tsp
- cornstarch - 1/2 c
- eggs, separated - 6 item
- water - 3 c
- margarine - 2 Tbsp
- lemon juice - 2/3 c
- grated lemon rind - 3 tsp
- baked pastry shell - 1 item
How to make lemon meringue pie:
Mix cornstarch, 1 cup of sugar and salt; slowly add water. Stir regularly over boiling water until thick enough to mound slightly (should turn clear), about 10 minutes. Beat egg yolks and 1 cup of sugar, then stir into hot mixture a little at a time. Cook 2 minutes, stirring constantly. Remove from heat; add margarine, lemon rind and juice. Cool to room temperature. Turn into pie shell.Beat egg whites until foamy. Add sugar 1 tablespoon at a time; beat well after each addition. Beat until stiff. Spread some meringue around the edge of filling first; finish filling top. Bake in a 350° oven for 15 to 20 minutes.
