Lemon ice cream pie
Ingredients/Components
- salt - 1/8 tsp
- egg whites, beaten stiff - 3 item
- whipping cream - 1 c
- plus 1 Tbsp - 1/2 c
- lemon juice - 1/4 c
- lemon rind, grated - 1/2 item
- egg yolks, beaten until thick and lemon colored - 3 item
- crushed vanilla wafer crumbs - 3/4 c
How to make lemon ice cream pie:
Combine first 5 ingredients and cook in double boiler until creamy. Let cool. While this cools, crush vanilla wafers for 3/4 cup. Beat egg whites stiff. Fold in custard; whip whipping cream and fold in.Line freezer tray with crumbs and pour in custard. Leave some crumbs for top. Makes 1 ice cube tray. Makes 8 servings.
