Lemon ice
Ingredients/Components
- sugar - 1 c
- water - 2 c
- lemon juice - 1 c
- finely grated lemon peel - 1 Tbsp
How to make lemon ice:
Heat water and sugar to boiling in pan; reduce heat. Simmer uncovered 5 minutes; remove from heat. Stir in lemon peel and lemon juice. Cool to room temperature. Pour into loaf pan (9 x 5 x 3-inch). Freeze uncovered 3 to 4 hours, stirring every 30 minutes. (Mixture should be broken into tiny crystals but should not be solid.) Serve in chilled dessert dishes.If not to be used in 4 hours, cut into 1/2-inch chunks; place in bowl, cover and freeze. Can also put ice in scooped out lemons. Slice off top of lemon, remove pulp and fill with lemon ice. Replace top on lemon and freeze. Makes 8 servings. Serve with almond cookie.
