Lemon cream chicken
Ingredients/Components
- half and half - 1 c
- salt - 1 item
- butter - 1 2
- lemon juice - 4 Tbsp
- Parmesan cheese - 1 item
- pepper to taste - 1 item
- sherry optional - 3 4
- chicken breasts - 1 lb
- grated rind of 1 lemon
How to make lemon cream chicken:
Pound chicken until flat. Brown on both sides in butter. Put chicken into flat baking dish (9 x 9-inch). Combine half and half and fresh squeezed lemon juice. Add salt, pepper and lemon rind. Pour over chicken. Sprinkle with Parmesan cheese and broil for 10 minutes or until cheese bubbles.Optional: Sherry may be added before pouring sauce over chicken. Goes well with rice and broccoli or asparagus.
