Ingredients/Components

  • salt - 1/2 tsp
  • flour - 3 Tbsp
  • margarine - 1 Tbsp
  • lemon juice - 3 Tbsp
  • pepper - 1/4 tsp
  • olive oil - 2 Tbsp
  • medium onion, chopped - 1 item
  • rice - 1 item
  • thyme - 1/2 tsp
  • skinless, boneless chicken breast halves - 4 item
  • fried chicken seasoning - 1/2 tsp
  • chicken broth or 1 c - 1 c

How to make lemon chicken:

Combine first 4 ingredients in brown paper bag and shake to mix. Add chicken and shake to coat. Remove chicken and reserve remaining flour mixture. In a large skillet, warm 1 tablespoon olive oil. Brown chicken on one side, then add remaining oil and brown other side. Remove chicken from skillet. Add margarine to skillet and add onions, cooking until soft.

Stir in remaining flour and stir until incorporated. Add broth, lemon juice and thyme and bring to a boil, stirring constantly. Return chicken to skillet. Cover and cook until chicken is tender. Serve over prepared rice.
