Lemon chicken
Ingredients/Components
- salt - 1/2 tsp
- flour - 3 Tbsp
- margarine - 1 Tbsp
- lemon juice - 3 Tbsp
- pepper - 1/4 tsp
- chicken broth - 1 c
- olive oil - 4 Tbsp
- medium onion, chopped - 1 item
- thyme or sweet basil - 1/2 tsp
How to make lemon chicken:
In a bag combine flour, salt and pepper; shake to mix. Add chicken and shake to coat. Remove chicken and save seasoned flour. In large skillet heat 1 tablespoon oil on medium heat. Add chicken and brown on one side. Add remaining oil and brown on other side. Remove chicken. Add margarine and onion; stir in reserved seasoned flour and cook 1 minute. Add broth, lemon juice and thyme; bring to boil, stirring constantly. Return chicken; reduce heat and cover skillet.
