Ingredients/Components

  • sugar - 2 Tbsp
  • salt - 1 tsp
  • butter - 2 Tbsp
  • pepper - 1/8 tsp
  • tapioca - 3 Tbsp
  • cracker crumbs - 1/3 c
  • sliced carrots - 2 c
  • sliced celery - 2 c
  • can green beans, drained - 1 item
  • green pepper, cut into strips - 1/2 item
  • 13 oz - 1 lb

How to make layered vegetable casserole:

Arrange carrots, celery, green pepper and beans in layers in buttered casserole dish. Combine tomatoes, tapioca, sugar and seasonings in a saucepan. Heat. Pour over vegetables. Cover and bake at 350° for 1 hour. Remove from oven. Sprinkle with cracker crumbs and top with melted butter. Return to oven and bake, uncovered, about 1 hour. Serves 15.
