King ranch chicken casserole

- margarine - 1/4 c
- salt and pepper to taste - 1 item
- cans cream of chicken soup - 2 item
- bag shredded Cheddar cheese - 1 (12
- medium bell pepper, diced - 1 item
- cans diced Ro-Tel - 2 item
- medium white onion, diced - 1 item
- canned chicken - 2 c
- to 15 corn tortillas, cut into strips - 12 item
How to make king ranch chicken casserole:
Preheat oven to 325°. Dice up onion and bell pepper and cook with margarine until tender. Stir in chicken soup and Ro-Tel. In a 9 x 13 pan, spray with Pam and layer tortillas, sauce and cheese. Layer several times. Cook for 35 minutes. Top with cheese. Bake for 5 minutes longer. Let stand 5 to 10 minutes to thicken.Recipe categories: Chicken, Main dish, Casseroles.
