Ingredients/Components

  • margarine - 2 Tbsp
  • chopped onion - 1/2 c
  • minced garlic or more to suit - 1 tsp
  • boneless, skinless chicken, cut in 1-inch strips - 1 lb
  • yellow pepper, cored and diced - 1 item
  • ham, cut in 1/4-inch strips - 1/4 lb
  • Italian or Mexican tomato sauce - 3 c
  • cooked long grain rice - 2 c
  • minced green onions tops and all - 1/4 c

How to make jambalaya:

Melt margarine over medium heat. Add onion, garlic and pepper. Cook to transparent (3 or 4 minutes). Add chicken, tomato sauce and ham. Bring to boil, then simmer 5 minutes, stirring often. Meanwhile, you have chopped the onion and cooked the rice
