- all-purpose flour
- unsweetened pineapple juice - 3/4 c
- pepper - 1/4 tsp
- vegetable cooking spray - 1 item
- long grain rice, cooked - 2 c
- egg white, lightly beaten - 1 item
- skinned, boned chicken breast halves - 4 (4
- curry powder, divided - 1 tsp
- flaked coconut, minced - 1 Tbsp
- margarine or butter I use 4 Tbsp - 2 tsp
- medium bananas, cut into 1/2 slices - 2 item
- green onions, cut into 1/4 inch pieces - 6 item
How to make jamaican chicken:
Place the chicken between 2 sheets heavy plastic wrap and flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Combine the flour, coconut, 1/2 teaspoon curry powder, salt and pepper.
