  • eggs - 3 item
  • chicken broth - 6 c
  • pepper to taste - 1 item
  • salt to taste - 1 item
  • parsley, minced - 3 Tbsp
  • imported grated Parmesan cheese - 1/4 c

How to make italian soup:

Bring chicken broth to a rapid boil. Beat the eggs with the cheese and parsley. Pour slowly into the boiling soup, stirring with a fork until egg mixture separates into little shreds. Remove from heat immediately to avoid toughening the eggs. Season with salt and pepper to taste. Serve immediately with additional grated cheese. Serves 6.
