- sugar - 3 Tbsp
- salt - 1 tsp
- flour - 4 to
- baking powder - 4 tsp
- baking soda - 1/2 tsp
- caraway seed - 1 Tbsp
- buttermilk or soured milk - 2 c
- dark seedless raisins or currants - 1 c
- butter and cinnamon sugar - 1 item
How to make irish soda bread:
In a large bowl, mix 4 cups flour with the baking powder, soda, salt, sugar and caraway seed. Add raisins and mix with fingers to separate them. Add milk and mix with a fork until mixture forms a dough. Sprinkle about 1/4 cup more flour on a board or counter. Turn out dough and knead for about 5 minutes, working in the flour from the board and forming the dough into a smooth rond loaf. If sticky, add more flour.Grease a 9-inch skillet or cake pan with Crisco and dust with flour. Place loaf evenly into pan and cut a 1/2-inch deep cross in the top. Bake at 350° for 30 to 40 minutes. Remove to a wire rack and rub the top with butter. Sprinkle with cinnamon sugar. Let bread cool completely before slicing. It tastes better the next day.
