- cinnamon - 1 item
- vanilla - 1 tsp
- confectioners sugar - 1 lb
- flaked coconut - 1 1
- medium baked potato or mashed - 1 item
How to make irish potatoes:
In medium size mixing bowl mash the hot pulp of baked potato with a fork. Add the sugar and blend well. (If the pulp is not hot enough to melt sugar, place bowl in larger bowl with hot water.) Add vanilla and coconut; work into mixture thoroughly. Form dough into small rounds and roll each one in cinnamon lightly.Recipe categories: Desserts, Lunch/snacks, Candy.
