Hummingbird cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- salt - 1 tsp
- chopped nuts - 1 c
- soda - 1 tsp
- can crushed pineapple - 1 oz
- enriched all-purpose flour - 3 c
- medium or 3 small bananas, chopped - 2 item
- buttery flavored vegetable oil*
How to make hummingbird cake:
Mix flour, soda, salt, cinnamon, sugar, oil, eggs and pineapple; mix only by hand. Add bananas and nuts; mix again. Pour mixture into a tube pan that has been greased and floured. Bake in a 350° oven for 1 hour and 5 minutes. Let cool in pan 1 hour before removing.*Or substitute 1 1/2 cups vegetable oil and 1 teaspoon butter flavoring.
