Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • salt - 1 tsp
  • chopped nuts - 1 c
  • soda - 1 tsp
  • can crushed pineapple - 1 oz
  • enriched all-purpose flour - 3 c
  • medium or 3 small bananas, chopped - 2 item
  • buttery flavored vegetable oil*

How to make hummingbird cake:

Mix flour, soda, salt, cinnamon, sugar, oil, eggs and pineapple; mix only by hand. Add bananas and nuts; mix again. Pour mixture into a tube pan that has been greased and floured. Bake in a 350° oven for 1 hour and 5 minutes. Let cool in pan 1 hour before removing.

*Or substitute 1 1/2 cups vegetable oil and 1 teaspoon butter flavoring.
