Hot crabmeat dip
Ingredients/Components
- flour - 6 Tbsp
- butter - 6 Tbsp
- Velveeta cheese - 1/2 lb
- onion, chopped - 1 item
- minced parsley - 2 Tbsp
- stalks celery, chopped - 4 item
- minced pimento - 2 Tbsp
- cup evaporated milk - 1 item
- cup chicken broth - 1/2 item
- cup white wine - 1/2 item
- salt, pepper and hot sauce to taste - 1 item
- fresh crabmeat crawfish may be substituted - 1 lb
- cup chopped shallots - 1/2 item
How to make hot crabmeat dip:
Melt butter; saut?© onions and celery. Stir in flour, stirring until smooth. Add milk, broth and wine slowly, stirring to keep a smooth consistency. Add cheese and melt. Stir in crabmeat, parsley, pimento and green onions. Season to taste. Cook on low heat about 15 minutes. Serve with crackers, keeping dip hot in a chafing dish.
