Ingredients/Components

  • milk
  • butter or margarine - 6 Tbsp
  • salt - 1 tsp
  • water - 2 qt
  • all-purpose flour - 6 Tbsp
  • pepper - 1/2 tsp
  • chopped onion - 1 c
  • diced celery - 2 c
  • diced carrots - 2 item
  • medium potatoes, peeled and sliced - 6 item

How to make hearty potato soup:

In large kettle, cook potatoes, carrots and celery in water until tender, about 20 minutes. Drain, reserving liquid; set aside. In the same kettle, saute onion in the butter until transparent or soft. Stir in salt, pepper and flour. Gradually stir in milk, stirring constantly, until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved liquid, depending on desired thickness. Heat thoroughly. Serve. Makes about 2 1/2 quarts. Serves 8 to 10 people.
