  • vanilla - 1 tsp
  • salt - 1 tsp
  • baking soda - 1/2 tsp
  • firmly packed brown sugar - 2 c
  • popped corn - 6 qt
  • corn syrup light or dark - 1/2 c
  • 2 sticks butter or margarine - 1 c

How to make baked caramel corn:

Melt butter; stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly; boil without stirring for five minutes. Remove from heat. Stir in baking soda and vanilla. Gradually pour over popped corn, mixing well. Turn into two large shallow baking or roasting pans. Bake in 250° oven for 1 hour, stirring every 15 minutes. Remove from oven; cool completely. Break apart and store in tightly covered container. Makes about 5 quarts of caramel corn.
