Ingredients/Components

  • sugar - 2 c
  • vanilla - 2 tsp
  • chopped pecans - 1 c
  • pkg
  • confectioners sugar - 1 to
  • flaked coconut - 1 c
  • baking soda - 2 tsp
  • all-purpose flour - 2 c
  • eggs, lightly beaten - 2 item
  • can crushed pineapple in juice, undrained - 1 oz
  • 1 stick oleo - 1/2 c

How to make hawaiian wedding cake:

Frosting:1 (8 oz.) pkg. cream cheese, softened1/2 c. (1 stick) oleo2 tsp. vanilla1 1/2 to 2 c. confectioners sugar Preheat oven to 350°. Grease and flour a 13 x 9-inch pan. In a large bowl, combine flour, sugar and baking soda. Whisk until blended. Stir together pineapple with juice and eggs. Fold into dry mixture. Fold in nuts and coconut; stir just to blend. Pour into pan and bake 40 to 45 minutes or until a wooden pick inserted in center comes out clean. Place pan on rack to cool slightly.

To make frosting, in a medium size bowl cream together cream cheese, oleo and vanilla. Add enough sugar for spreading consistency. Spread over warm cake. Makes 12 servings.
