- garlic powder
- ground beef - 5 lb
- coarse ground pepper
- mustard seed optional
- salt, to your own taste - 5 tsp
- sage, oregano, paprika and thyme Use different amounts of these spices to suit your own taste - 1 Tbsp
How to make hamburger sausage:
This recipe is easy to do, but does take about 24 hours from start to finish. It is well worth the time.Mix all ingredients, except beef, together in a small bowl. Add spices to the ground beef. (If wild game is used, see note.) Mix by hand and refrigerate overnight. Shape into 4 or 5 oblong rolls about 2 inches in diameter. Place on broiler pan on lower rack in oven. Cook for 8 hours at 150°, turning every 2 hours. Cool on paper towels. Refrigerate rolls, or freeze after wrapping well. Slice thin to eat or use on pizza or in sandwiches.
