Green tomato relish
Ingredients/Components
- sugar - 3 c
- salt - 3/4 c
- chopped onion
- diced pimiento - 1/2 c
- celery seed - 1 Tbsp
- chopped cabbage - 7 c
- green pepper - 1 c
- whole cloves - 2 tsp
- mustard seed - 1 Tbsp
- chopped green tomatoes - 4 qt
- cinnamon stick - 1/2 item
- vinegar white - 6 c
How to make green tomato relish:
Chop up tomatoes (use blender; with small tomatoes, do not peel) and mix with the salt. Let stand overnight. In morning, drain off and discard the juice. Add cabbage and vinegar in large saucepan with tomatoes. Boil 1/2 hour, then add the onion, green pepper and pimiento. Add sugar, celery and mustard seed. Put the cinnamon and cloves in a cheesecloth bag and add to pan. Cook until the onion is tender. Remove the cheesecloth bag and add to pan. Cook until the onion is tender. Remove the cheesecloth bag. Pack in hot sterilized jars and seal at once. Makes 7 or 8 pints, depending on how much cabbage used.Recipe categories: Sauces, Condiments, etc., Side dish.
