Green tomato bread
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 4 item
- salt - 1 tsp
- chopped nuts - 1 c
- flour
- baking powder - 1/2 tsp
- baking soda - 2 tsp
- boiling water - 2/3 c
- raisins - 2/3 c
- allspice - 1/4 tsp
- margarine or Crisco - 2/3 c
- several green tomatoes - 1 item
How to make green tomato bread:
Cut out stems and blossom end of several green tomatoes. Put tomatoes in blender, adding enough to make 2 cups pulp. Soak raisins in boiling water; cool. Cream the margarine with sugar, beating until fluffy. Add eggs, tomato pulp and the raisin-water mixture.In separate bowl mix the flour, baking soda, salt, baking powder, cinnamon, allspice and nuts. Add dry mix gradually to liquid mix, stirring until blended. Pour mix into 2 regular size greased and floured loaf pans. Bake at 350° for 70 minutes. Turn out of pans after 10 minutes of cooling.
