Grated sweet potato pudding
Ingredients/Components
- sweet potatoes, packed - 4 c
- butter - 1/2 lb
- large eggs, beaten - 2 item
- sugar
- molasses - 1/2 c
- milk - 2 c
- pure vanilla - 2 tsp
- sifted flour - 1 c
- each: salt, nutmeg and cinnamon - 1 tsp
How to make grated sweet potato pudding:
Grate potatoes. Melt butter; pour over potatoes and toss lightly. Add the eggs, sugar, molasses, milk and vanilla. In a small bowl, mix together the sifted flour with the salt, nutmeg and cinnamon. Add to potato mixture; stir to mix well. Turn into a buttered 2 1/2-quart baking dish. Bake in low oven at 325° for about 2 1/2 hours. During the first hour, stir several times. Cover with foil during the latter part of the baking period.In memory of Grandmother Deaton.
